Dubai Style Chocolate Bar

Method:
1.Melt the butter in a high sided frying pan, then add the Kadyif Pastry, cook more than you need. Fry until golden brown and then remove the pastry from the pan into a bowl to cool.
2.Melt the white chocolate and leave to one side.
3.Weigh out the sunflower seed spread into a bowl. Add the Pistachio flavour and then the melted white chocolate. Mix until homogenised. Add the lime green colour.
4.Weigh out 30g of the cooked pastry and add it to the bowl. Mix in until the mixture comes together.
5.Next temper your chocolate, heat the chocolate to 42Β°C then cool to 29Β°C by stirring, then bring the mixture back up to 31Β°C, do not exceed 32Β°C.
6.Fill up the chocolate mould so that each cavity is filled. Pour the chocolate out to make a nice thin shell. Place the chocolate mould into the fridge to set.
7.Once the chocolate is set, take it out of the fridge. Use 2 teaspoons to place the filling into the mould. Make sure not to over fil. You can use a thin metal spatula to make the filling even. Place into the fridge to set the filling.
8.Once the filling is set place more tempered milk chocolate on top and scrape the excess off. Then place back into the fridge to set.
9.Once the bars have set, demould them onto a work surface. Keep in an airtight container or wrap in presentation bags/foils.
