  • 3.75g​ Xanthan Gum
  • 5.25g Acetic Acid
  • 654.5g​ Water
  • 5g​ Banana Puree (Gerald Macdonald)

Banana Ketchup

This Banana Ketchup recipe brings a subtle sweetness and gentle fruit character to a savoury condiment base, using our banana flavour to deliver a consistent, balanced profile. Ideal for dipping, glazing, or as a unique twist in barbecue applications.

Method:

1. Add dry ingredients to a saucepan first and mix well.

2.  Add remaining ingredients, stir well and mix well with a blender

3. Bring to the boil, simmer gently and reduce to 850g

4.  Add selected flavour and stir. allow to cool.

5. Sterilise glass storage jars & lids by submerging in a pan of water and bring to the boil for 5 minutes. Allow to cool sufficiently to remove from pan

6. Dispense sauce into sterilised jars and store chilled​
