Chocolate Orange Hot Cross Buns

Ingredients

  • 300g Bread flour – 47.44%
  • 30g Soft Bun 10% Concentrate – 4.6%
  • 10g Cocoa Powder – 1.5%
  • 10g Yeast – 1.5%
  • 5g Sugar – 0.76%
  • 200g Water – 30.5%
  • 100g Chocolate Chips – 15.2%

Crossing Paste

  • 50g Plain Flour
  • Milk

Glaze

  • 2 tbsp Granulated Sugar
  • 4 tbsp Water

Chocolate Orange Hot Cross Buns Recipe

Delicious Chocolate Orange Hot Cross Buns recipe made with our Brazilian Orange Oil and Chocolate Flavour.

Method

1. Add all the dry ingredients into the mixing bowl of the KitchenAid and combine with a spoon.

2. Add the water and the flavours.

3. Using the dough hook on the KitchenAid mix for 2 minutes on slow.

4. Once combined increase the speed to 6 and mix for 6 minutes.

5. Once fully combined you should have a smooth, stretchy dough. Weigh out into 60g of dough per bun.

6. Shape these into round buns.

7. Place on a lined baking tray, cover with lightly oiled clingfilm and prove for 55 minutes in the prover at 35°C.

8. Heat the Deck oven to 230°C.

9. In the meantime, make the paste for the crosses, mix the flour and milk together until a thick pipeable paste is achieved.

10. Once the buns have doubled in size, pipe thin crosses on top of the buns.

11. Bake for 20 minutes until golden brown.

12. While the buns are cooking make the glaze by slowly heating the granulated sugar and water.

13. As soon as the buns are out of the oven cover the buns with the glaze while they are still hot.

14. Leave to cool.
